Lemon And Herb Pasta Shells

This pasta can also be bulked up with green vegetables to feed a crowd.
This lemon and herb pasta is a vegetarian dish, but you can also add tuna or chicken if you want more protein.
This recipe serves 4.
You Will Need:
2 cloves garlic crushed
1 cup fresh basil
1 cup fresh parsley
1 cup fresh coriander
5 sprigs thyme
2 Tbsp Olive Oil
Juice (60ml) and Zest of 1 lemon plus wedges for serving
1 packet (100g) raw almonds toasted
400 g large pasta shells
Salt and Milled Pepper
Parmesan Shavings and Fresh Herbs to serve
Method:
Blitz garlic, basil, parsley, coriander, thyme, olive oil, lemon juice, and zest and half the almonds in a food processor until coarse.
Cook the pasta for 8 – 10 minutes in boiling salted water until al dente and drain.
Stir herb sauce through the pasta.
Place on a serving platter and season. Top with remaining almonds, parmesan shavings, and fresh herbs and serve this lemon and herb pasta with lemon wedges.
