Chutney Chicken Recipe

This is a quick and easy chutney chicken recipe and a meal that I like to do, especially when I only get home late and didn’t have time to cook in the morning before teaching.
Chutney Chicken Recipe
You Will Need:
1 packet (850g) of chicken drumsticks and thighs
Sauce:
1 cup of mayonnaise
1 cup of chutney
1 cup of water
1 onion
2 tbsp of mild curry powder
Sambal:
1/2 cup of chopped yellow and red cherry tomatoes
1/2 red onion diced
a handful of fresh coriander
a squeeze of lemon juice
salt and pepper to taste
Method:
Preheat the oven to 180 degrees Celcius.
Place the chicken skin side up in a lightly greased ovenproof dish.
Mix all the sauce ingredients together and pour over the chicken evenly.
Bake for between 45 and 55 minutes until chicken is golden brown and sauce is sticky.
Toss the sambal ingredients together and season well.
Ser the chicken with rice, poppadoms and sambal.
