Citrus Pudding – An Easy And Tasty Winter Pudding

This citrus pudding is super easy to make and makes a fresh change from the usual baked winter puddings.
You Will Need:
50 g butter that has been softened and some extra for greasing
200g castor sugar
zest of 2 lemons or 2 limes or 1 grapefruit
100 ml lemon, lime or grapefruit juice or even a mixture
3 large eggs separated
50 g flour
250 ml milk
icing sugar for dusting
Method:
Heat the oven to 180 degrees Celsius.
Grease a medium-sized oval baking dish with butter.
Cream the butter, castor sugar and zest in a food processor and combine until the mixture is pale.
Add the citrus juice, egg yolks, flour and milk and mix well. It may look a bit curdled.
Scrape into a bowl.
In a large clean bowl, whisk the egg whites until firm but not stiff, then gently fold into the zesty mixture.
Scrape into the baking dish and put in a roasting tin half filled with boiling hot water from the kettle.
Bake for 35-40 minutes until the top is slightly browned and set, but the pudding is still somewhat soft underneath.
You can also bake in ramekins or jars to make separate desserts, but then you will only need to bake for about 25 minutes.
Serve dusted with icing sugar.
Serve your citrus pudding with cream, ice cream or custard and enjoy.
