Fish Cake Recipes – Delicious And Healthy

Here are two variations of fish cake recipes for you to try.  The base recipe is the same but the one is made with hake and the other is made with salmon.

I have also included a tuna fish cake recipe and a snoek fish cake recipe below.

Although I love fish cakes, I don’t make these recipes as often as I would like to as they are a little time consuming.

Fish Cake Recipesfish cake recipes

Hake Fish Cakes

This recipe serves 4

You will Need:

800g white fish (hake)

120 ml lemon juice and zest of 2 lemons

2 medium potatoes

handful fresh parsley

handful fresh coriander

30 ml curry powder

1 tsp ground cumin

1 tsp ground coriander

salt and pepper

1 1/2 cups breadcrumbs

1 cup flour

2 eggs whisked

1/2 cup canola oil

Yogurt, chopped tomato, onion and cucumber to serve.

If you enjoy hake try this one.

Method:

Mash the fish and the potatoes together.

Stir in the lemon juice, half the herbs, and all the spices.

Season with salt and pepper.

Shape into 12 patties.

Combine the breadcrumbs with the remaining herbs and lemon zest.

Dip each patty in flour, then in the egg and coat in breadcrumbs.

Cover and refrigerate for 15 minutes.

Heat oil in a pan and fry fishcakes until they are golden.

Serve with a dollop of yogurt and sambal.

 

Salmon Fish Cakes With Citrus Salad

Follow the recipe above with the following tweaks:

Swap half the hake for steamed salmon.

Omit the spices.

Add:

30 ml creamed horseradish

15 ml finely chopped capers and 1/2 finely chopped red onion to fish cake mixture.

Swap sambal for a citrus salad of diced avocado, orange and grapefruit segments, fresh coriander and an Asian leaf mix.

 

Tuna Fish Cakes

You Will Need:

2 cans of tuna in brine, drained
1 large egg beaten
4 spring onions chopped finely
2 tbs breadcrumbs
1/4 cup finely chopped red pepper
Flour for dusting
Olive oil for frying

Method:

Place the tuna, egg, spring onions, red pepper, and breadcrumbs in a bowl and mix well.

Shape the mixture into 8–12 fish cakes and place in the fridge for 15 minutes to firm.

Dust the fishcakes with flour.

Heat a little oil in a non-stick frying pan and fry the fishcakes until golden brown.

Drain on a paper towel and serve with peas, baby potatoes and a salad.

Smoked Snoek Fish Cakes

You Will Need:

300 g flaked snoek
3 cloves garlic, finely chopped
1 onion, finely chopped
2 tsp mild curry powder
1 egg
2 tsp parsley
Olive oil
Flour for dusting
Salt and pepper

Method:

In a little olive oil fry the onions and garlic together with the curry powder until the onions are soft but not brown.

Mix the onion with the smoked fish and add the parsley, taste the mixture and adjust the seasoning with salt and pepper to taste.

Mix in the egg.

Form little balls and roll in the flour, shake off the excess flour and press flat into a cake.

Fry on medium heat in a little oil until golden brown on both sides.

Serve with cherry tomatoes and gherkins and Mash.
